Making Your Christmas Meal Go Smoothly

Everyone knows that Christmas is the one time of the year where everyone can let their hair down, forgot their worries and enjoy themselves. However, those who have tried to cook a Christmas meal for any more than 4 people will understand just how stressful preparing and serving the Christmas meal can be. Having to make sure portions are correct, everything finishes cooking at exactly the same time, and keeping it all warm are just some of the challenges. Lets take a look at some effective ways to reduce Xmas meal time stress.

Prepare Food Early. Believe it or not, a great deal of the Christmas meal can be prepared earlier than day or even the day before. You can cook all the veg in the morning and keep it in cold water until five minutes before serving. Just drop the veg in some hot water for 2-3 mins and it will be as if they were cooked right then. If you have a microwave you can make your sauces up early doors and then just heat them up again with a bit of added water when you need them. Don’t try this with the potatoes or turkey however, as these don’t taste so good reheated.

Lay Table Early. This can be done at the very beginning of the day and saves a lot of hassle. You can lay all the place settings, cutlery and champagne flutes as long as you know how many people you are expecting. You can even place the crackers in position and add decorations such as poinsettias in glass vases.Making sure everything is in place and everyone has everything they need early on saves people complaining they haven't been given a fork or napkin later on.


Self Serve
. By having dishes in the kitchen that people can serve themselves from, you can spare everyone (including yourself) a lot of hassle. This prevents the need to transfer serving dishes back on forth, means the table doesn't have to be bulging with all sorts of veg and meat trays and people can't take what they fancy. It’s advisable to keep the wine glasses on the table however as trying to juggle food and drink never ends well.

Discovering Nonna Nina's Kitchen: minnow heaven on the Italian Riviera (weblogsinc)

Just north of Portofino on the Italian Riveria, on the Genoa-side of the Monte
di Portofino Regional Park, is a perched hamlet called San Rocco di Camogli.
This is the best place on earth to devour the marvelously flavorful minnows
that come from the Gulf of Genoa, which the locals call Rossetti-little red
things. And little red things they are: about an inch long, thin as a
thermometer, translucent, and with a little red dot near the gills. You don't
just pop Rossetti in your mouth whole: you fork in dozens of them at a time.
And the best place to do this is on San Rocco di Camogli's single street, at
the venerable restaurant La Cucina di Nonna Nina-Grandma Nina's Kitchen.

You will not find Grandma Nina in the establishment: she left her corporeal
essence behind some years ago, and never set foot in the place anyway. She
also left behind many delicious regional recipes from yesteryear, recipes
transformed into exquisitely delectable dishes by the elusive, retiring, shy
Paolo Delpian and his wife, Rosalia, Grandma Nina's natural heirs.
